And here we are, full into the vinification !
The fermentation of the whites is almost over and we are ready to start the ageing. In the meantime, the fermentation of the reds is in its full swing, and we are working on our Merlots to obtain rich fruit aromas and silky tannins… In several weeks, the wines will put in barrels for a year or so of ageing…
