After quite a mild December, the winter has finally arrived in our vineyards of Graves and Saint-Emilion ! This cold period is crucial for the vines : they are at rest, the sap is going down to the roots (those have been hilled with soil to keep them away from cold). Now we can start pruning !
We prepare the next vintage starting from the very first cut of the pruning shears. The pruning is more or less heavy, depending on each vine plot and type of terroir. This way, we can anticipate the yield !

Our vintners know the terroir by heart, and we have absolute trust in them for this delicate mission ! We wish them good luck in their work, with a good pair of gloves !
